- 1.5 lbs Baby Potatoes
- 2 tablespoons Unsalted Butter
- 4 cloves Garlic, minced
- 1 cup Heavy Cream
- ½ cup Vegetable or Chicken Broth
- ½ teaspoon Salt
- ¼ teaspoon Freshly Cracked Black Pepper
- 1 teaspoon Dijon Mustard (optional)
- 1 tablespoon Chopped Fresh Parsley
Instructions
- Wash and halve the baby potatoes.
- In a large pot, bring water to a boil and add the potatoes. Cook until tender, about 15 minutes.
- In a separate saucepan, melt the butter over medium heat. Add minced garlic and sauté until fragrant.
- Stir in heavy cream and broth, bringing the mixture to a simmer.
- Add salt, pepper, and Dijon mustard (if using). Stir well.
- Drain the potatoes and add them to the sauce. Toss to coat.
- Garnish with chopped parsley before serving.
