Ingredients

  • 1.5 lbs Baby Potatoes
  • 2 tablespoons Unsalted Butter
  • 4 cloves Garlic, minced
  • 1 cup Heavy Cream
  • ½ cup Vegetable or Chicken Broth
  • ½ teaspoon Salt
  • ¼ teaspoon Freshly Cracked Black Pepper
  • 1 teaspoon Dijon Mustard (optional)
  • 1 tablespoon Chopped Fresh Parsley

Instructions

  1. Wash and halve the baby potatoes.
  2. In a large pot, bring water to a boil and add the potatoes. Cook until tender, about 15 minutes.
  3. In a separate saucepan, melt the butter over medium heat. Add minced garlic and sauté until fragrant.
  4. Stir in heavy cream and broth, bringing the mixture to a simmer.
  5. Add salt, pepper, and Dijon mustard (if using). Stir well.
  6. Drain the potatoes and add them to the sauce. Toss to coat.
  7. Garnish with chopped parsley before serving.
