- 2 large apples (Granny Smith or Honeycrisp), peeled, cored, and diced
- 2 cups all-purpose flour
- 3/4 cup brown sugar, packed
- 2 teaspoons baking powder
- 1 1/2 teaspoons ground cinnamon
- 1/2 teaspoon salt
- 2 large eggs
- 1/2 cup milk
- 1/4 cup unsalted butter, melted
- 1 teaspoon vanilla extract
- 2 tablespoons powdered sugar (for glaze)
- 1–2 tablespoons milk (adjust for glaze consistency)
Instructions
- Preheat oven to 375°F (190°C) and line a muffin tin with paper liners.
- In a large bowl, mix flour, brown sugar, baking powder, cinnamon, and salt.
- In another bowl, whisk eggs, milk, melted butter, and vanilla extract.
- Combine wet and dry ingredients, then fold in diced apples.
- Spoon batter into muffin cups, filling each about 3/4 full.
- Bake for 18–20 minutes or until a toothpick comes out clean.
- Let muffins cool slightly before glazing.
- Mix powdered sugar and milk to make a smooth glaze, then drizzle over muffins.
Notes
- Use firm apples for best texture.
- Adjust glaze thickness with more or less milk.
- Store in an airtight container for up to 3 days.
