Description

Delicious apple fritter muffins with a sweet glaze, perfect for breakfast or a snack.


Ingredients

  • 2 large apples (Granny Smith or Honeycrisp), peeled, cored, and diced
  • 2 cups all-purpose flour
  • 3/4 cup brown sugar, packed
  • 2 teaspoons baking powder
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1/2 cup milk
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 2 tablespoons powdered sugar (for glaze)
  • 12 tablespoons milk (adjust for glaze consistency)

Instructions

  1. Preheat oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix flour, brown sugar, baking powder, cinnamon, and salt.
  3. In another bowl, whisk eggs, milk, melted butter, and vanilla extract.
  4. Combine wet and dry ingredients, then fold in diced apples.
  5. Spoon batter into muffin cups, filling each about 3/4 full.
  6. Bake for 18–20 minutes or until a toothpick comes out clean.
  7. Let muffins cool slightly before glazing.
  8. Mix powdered sugar and milk to make a smooth glaze, then drizzle over muffins.
