Ingredients

  • 2 cups broccoli florets (steamed until tender-crisp, then finely chopped)
  • 1 cup breadcrumbs (plain or Italian seasoned)
  • 1½ cups shredded sharp cheddar cheese
  • ⅓ cup grated Parmesan cheese
  • 2 large eggs, beaten
  • 2 tablespoons all-purpose flour
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and pepper, to taste
  • Cooking spray, for greasing the sheet

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper and lightly grease with cooking spray.
  2. In a large bowl, mix chopped broccoli, breadcrumbs, cheddar cheese, Parmesan cheese, beaten eggs, flour, garlic powder, onion powder, salt, and pepper.
  3. Shape the mixture into 1-inch balls and place them on the prepared baking sheet.
  4. Bake for 15-20 minutes until golden brown and crisp.
  5. Let cool for 5 minutes before serving.
