Ingredients

  • 4 thick cod fillets
  • 1 tsp salt
  • 1 tsp pepper
  • 2 tbsp olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 1 can full-fat coconut milk
  • 3 tbsp fresh lemon juice
  • 1 tsp lemon zest

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Season the cod fillets with salt and pepper.
  3. In a pan, heat olive oil over medium heat.
  4. Add chopped onion and sauté until translucent.
  5. Add minced garlic and grated ginger, cooking for an additional minute.
  6. Pour in the coconut milk, lemon juice, and lemon zest. Stir to combine.
  7. Place cod fillets in a baking dish and pour the sauce over them.
  8. Bake for 15-20 minutes or until the cod flakes easily with a fork.
