Ingredients

  • ¾ cup packed brown sugar

  • 1 tablespoon dark rum (optional)
  • Pinch of salt
  • 1 ½ cups all-purpose flour
  • 1 tablespoon baking powder
  • ¾ cup granulated sugar
  • ½ teaspoon salt
  • 6 tablespoons cold unsalted butter, cubed
  • ½ cup buttermilk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, melt butter over medium heat.
  3. Add bananas, brown sugar, vanilla, cinnamon, nutmeg, rum, and salt. Cook until bananas soften.
  4. Transfer banana mixture to a baking dish.
  5. In a bowl, mix flour, baking powder, granulated sugar, and salt.
  6. Cut in cold butter until mixture resembles coarse crumbs.
  7. Stir in buttermilk and vanilla to form a dough.
  8. Drop spoonfuls of dough over the banana mixture.
  9. Bake for 25-30 minutes until topping is golden.
