Instructions
- Prepare the brisket by rubbing it with mustard and the brisket rub.
- Smoke the brisket using hickory wood pellets for about 10-12 hours at 225°F.
- Let the brisket rest before slicing it thinly.
- Butter one side of each slice of sourdough bread.
- Layer brisket, colby jack cheese, provolone cheese, and crispy onions between two slices of bread.
- Grill the sandwiches until the bread is golden and the cheese melts.
