  • 1 1⁄4 cups granulated sugar
  • 1 can crushed pineapple, undrained (8 ounce)
  • 1⁄2 cup buttermilk
  • 1⁄2 cup butter, melted and cooled slightly
  • 2 large eggs, at room temperature
  • 1 tsp rum flavoring or vanilla
  • 2 1⁄2 cups all purpose flour
  • 1 tsp baking powder
  • 1⁄2 tsp baking soda
  • 1 tsp ground cinnamon
  • 1 tsp salt
  • 1⁄2 cup flaked coconut

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9x5-inch loaf pan.
  2. In a large bowl, mix mashed bananas, sugar, pineapple, buttermilk, melted butter, eggs, and rum flavoring.
  3. In another bowl, whisk flour, baking powder, baking soda, cinnamon, and salt.
  4. Gradually add dry ingredients to wet mixture, stirring until just combined.
  5. Fold in coconut.
  6. Pour batter into prepared pan.
  7. Bake for 60-70 minutes or until a toothpick comes out clean.
  8. Cool in pan for 10 minutes, then transfer to a wire rack.
