A delicious Blueberry Cream Cheese French Toast Casserole perfect for breakfast or brunch.
Ingredients

- 1 large loaf french bread, about 8 cups (day old is best)
- 8 eggs
- 2 1/2 cups half and half
- 1/3 cup sugar
- 2 teaspoons cinnamon
- 2 teaspoons vanilla extract
- 1/2 teaspoon salt
- 1 cup fresh blueberries or frozen blueberries tossed in 1 tablespoon of flour
- 18 oz package cream cheese, cubed
- 1/4 cup raw sugar for sprinkling on top (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Cube the french bread and place it in a greased baking dish.
- In a large bowl, whisk together eggs, half and half, sugar, cinnamon, vanilla extract, and salt.
- Pour the egg mixture over the bread cubes. Stir gently to combine.
- Sprinkle blueberries and cream cheese cubes on top.
- If desired, sprinkle raw sugar over the top.
- Bake for 45-50 minutes or until the top is golden brown.
Notes
- Let the casserole sit for a few minutes before serving.
- Pair with maple syrup for extra sweetness.
