Description

A delicious Blueberry Cream Cheese French Toast Casserole perfect for breakfast or brunch.


Ingredients

  • 1 large loaf french bread, about 8 cups (day old is best)
  • 8 eggs
  • 2 1/2 cups half and half
  • 1/3 cup sugar
  • 2 teaspoons cinnamon
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon salt
  • 1 cup fresh blueberries or frozen blueberries tossed in 1 tablespoon of flour
  • 18 oz package cream cheese, cubed
  • 1/4 cup raw sugar for sprinkling on top (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cube the french bread and place it in a greased baking dish.
  3. In a large bowl, whisk together eggs, half and half, sugar, cinnamon, vanilla extract, and salt.
  4. Pour the egg mixture over the bread cubes. Stir gently to combine.
  5. Sprinkle blueberries and cream cheese cubes on top.
  6. If desired, sprinkle raw sugar over the top.
  7. Bake for 45-50 minutes or until the top is golden brown.

  • Let the casserole sit for a few minutes before serving.
