- ½ cup unsalted butter, melted
- 1 cup all-purpose flour
- ¾ cup old-fashioned oats (not quick cook or instant)
- ½ cup granulated sugar
- ¼ cup light brown sugar, packed
- pinch salt (optional)
- 12 ounces (2 cups) blueberries (fresh or frozen)
- ⅓ cup granulated sugar
- 2 tablespoons lemon juice
- 2 teaspoons cornstarch
Instructions
- Preheat oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper.
- In a bowl, mix melted butter, flour, oats, granulated sugar, brown sugar, and salt to form the crust and crumble mixture.
- Press half of the mixture firmly into the bottom of the pan to form the crust.
- In another bowl, combine blueberries, granulated sugar, lemon juice, and cornstarch for the filling.
- Spread the blueberry mixture evenly over the crust.
- Sprinkle the remaining crumble mixture over the blueberries.
- Bake for 40-45 minutes or until the top is golden brown.
- Let cool completely before cutting into bars.
Notes
- Use old-fashioned oats for best texture.
- Do not thaw frozen blueberries before use.
- Chill the bars before cutting for cleaner slices.
