Ingredients

  • ½ cup unsalted butter, melted
  • 1 cup all-purpose flour
  • ¾ cup old-fashioned oats (not quick cook or instant)
  • ½ cup granulated sugar
  • ¼ cup light brown sugar, packed
  • pinch salt (optional)
  • 12 ounces (2 cups) blueberries (fresh or frozen)
  • ⅓ cup granulated sugar
  • 2 tablespoons lemon juice
  • 2 teaspoons cornstarch

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper.
  2. In a bowl, mix melted butter, flour, oats, granulated sugar, brown sugar, and salt to form the crust and crumble mixture.
  3. Press half of the mixture firmly into the bottom of the pan to form the crust.
  4. In another bowl, combine blueberries, granulated sugar, lemon juice, and cornstarch for the filling.
  5. Spread the blueberry mixture evenly over the crust.
  6. Sprinkle the remaining crumble mixture over the blueberries.
  7. Bake for 40-45 minutes or until the top is golden brown.
  8. Let cool completely before cutting into bars.

Notes

  • Use old-fashioned oats for best texture.
  • Do not thaw frozen blueberries before use.
  • Chill the bars before cutting for cleaner slices.
