Ingredients

- 12 oz bow-tie pasta (or any short pasta like rotini)
- 2/3 cup dried cranberries
- 1/3 cup toasted chopped pecans
- 2 cups cooked turkey, chopped
- 1/4 cup sliced green onions
- 1/2 cup diced celery (about 2 stalks)
- 2 tbsp apple cider vinegar
- 1 tsp sugar (optional)
- 1/3 cup mayonnaise
- 2/3 cup poppy seed dressing
Instructions
- Cook the bow-tie pasta according to package instructions. Drain and set aside.
- In a large bowl, combine pasta, dried cranberries, toasted pecans, turkey, green onions, and celery.
- In a separate bowl, whisk together apple cider vinegar, sugar, mayonnaise, and poppy seed dressing.
- Pour the dressing over the pasta salad and mix well to combine.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
- Feel free to add more vegetables like bell peppers or carrots.
- This salad works well as a side dish or main course.
