Description

A refreshing Bow-Tie Cranberry Pasta Salad with a mix of flavors and textures.


Ingredients

  • 12 oz bow-tie pasta (or any short pasta like rotini)
  • 2/3 cup dried cranberries
  • 1/3 cup toasted chopped pecans
  • 2 cups cooked turkey, chopped
  • 1/4 cup sliced green onions
  • 1/2 cup diced celery (about 2 stalks)
  • 2 tbsp apple cider vinegar
  • 1 tsp sugar (optional)
  • 1/3 cup mayonnaise
  • 2/3 cup poppy seed dressing

Instructions

  1. Cook the bow-tie pasta according to package instructions. Drain and set aside.
  2. In a large bowl, combine pasta, dried cranberries, toasted pecans, turkey, green onions, and celery.
  3. In a separate bowl, whisk together apple cider vinegar, sugar, mayonnaise, and poppy seed dressing.
  4. Pour the dressing over the pasta salad and mix well to combine.
  5. Chill in the refrigerator for at least 30 minutes before serving.
