Description

A sweet and savory dish combining chicken with pineapple and brown sugar.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts or thighs, cut into chunks
  • 1 can (20 oz) pineapple chunks with juice (do not drain)
  • ½ cup brown sugar (light or dark)
  • ⅓ cup low-sodium soy sauce
  • 2 tbsp rice vinegar
  • 1 tsp ground ginger (or 1 tbsp fresh grated)
  • 1 tbsp cornstarch
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • Salt and pepper, to taste
  • Red pepper flakes (optional, for heat)
  • Chopped green onions (optional garnish)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add chicken chunks and cook until browned and cooked through.
  3. In a bowl, mix pineapple chunks with juice, brown sugar, soy sauce, rice vinegar, ginger, garlic powder, salt, and pepper.
  4. Pour the mixture over the cooked chicken.
  5. Bring to a simmer and cook for 5-7 minutes.
  6. Mix cornstarch with a little water and stir into the skillet to thicken sauce.
  7. Cook for an additional 1-2 minutes.
  8. Serve hot, garnished with red pepper flakes and green onions if desired.

Notes

  • Adjust sweetness by adding more or less brown sugar.
  • Serve with rice or noodles.
