Ingredients

- 1.5 lbs boneless, skinless chicken breasts or thighs, cut into chunks
- 1 can (20 oz) pineapple chunks with juice (do not drain)
- ½ cup brown sugar (light or dark)
- ⅓ cup low-sodium soy sauce
- 2 tbsp rice vinegar
- 1 tsp ground ginger (or 1 tbsp fresh grated)
- 1 tbsp cornstarch
- 2 tbsp olive oil
- 1 tsp garlic powder
- Salt and pepper, to taste
- Red pepper flakes (optional, for heat)
- Chopped green onions (optional garnish)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add chicken chunks and cook until browned and cooked through.
- In a bowl, mix pineapple chunks with juice, brown sugar, soy sauce, rice vinegar, ginger, garlic powder, salt, and pepper.
- Pour the mixture over the cooked chicken.
- Bring to a simmer and cook for 5-7 minutes.
- Mix cornstarch with a little water and stir into the skillet to thicken sauce.
- Cook for an additional 1-2 minutes.
- Serve hot, garnished with red pepper flakes and green onions if desired.
Notes
- Adjust sweetness by adding more or less brown sugar.
- Serve with rice or noodles.
