Delicious Brown Sugar Pop Tart Cookies filled with sweet brown sugar and spices.

- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 cup unsalted butter, softened
- 1 cup brown sugar, packed
- ½ cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup brown sugar (for filling)
- 1 tablespoon cornstarch
- 1 teaspoon cinnamon
- 1 tablespoon milk (for brushing)
- 1 cup powdered sugar (for icing)
- 2 tablespoons milk (for icing)
- Sprinkles (optional, for decoration)
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix flour, baking powder, baking soda, and salt.
- In another bowl, cream the butter, brown sugar, and granulated sugar.
- Add eggs and vanilla to the butter mixture and mix well.
- Gradually add the dry ingredients to the wet ingredients and mix until combined.
- In a separate bowl, mix the filling ingredients: brown sugar, cornstarch, and cinnamon.
- Roll out the dough and cut into rectangles.
- Place filling on half of the rectangles, then top with another rectangle.
- Brush the tops with milk and seal the edges.
- Bake for 12-15 minutes or until golden.
- Let cool and mix icing ingredients, then drizzle over cookies.
- Add sprinkles if desired.
