Ingredients

  • 1 pint cherry tomatoes, sliced in half
  • 1/3 cup chopped basil
  • 4 garlic cloves, minced
  • 1 tablespoon balsamic vinegar
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 12 oz spaghetti pasta
  • 1 lb boneless, skinless chicken breasts, diced
  • 1 tablespoon Italian seasoning
  • 2 tablespoons olive oil, divided
  • 1/2 cup Parmesan cheese, grated or shredded
  • 1 tablespoon balsamic glaze (optional)

Instructions

  1. Cook spaghetti according to package instructions.
  2. In a large pan, heat 1 tablespoon olive oil over medium heat.
  3. Add diced chicken, Italian seasoning, salt, and pepper. Cook until chicken is browned and cooked through.
  4. Add minced garlic and cherry tomatoes to the pan. Cook for 3-4 minutes.
  5. Stir in balsamic vinegar and chopped basil.
  6. Add cooked spaghetti to the pan and toss to combine.
  7. Serve with grated Parmesan cheese and a drizzle of balsamic glaze if desired.
