Description

Ingredients

  • 1½ cups all-purpose flour
  • 1 cup granulated sugar
  • ¾ cup packed brown sugar
  • ½ cup unsalted butter, softened
  • 2 large eggs
  • ½ cup buttermilk (or ½ cup milk + ½ tsp vinegar)
  • ¼ cup molasses
  • 1 tsp baking soda
  • ½ tsp salt
  • ½ tsp ground cinnamon (optional)
  • ½ cup unsalted butter
  • 1 cup packed brown sugar
  • ¼ cup heavy cream
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or an 8x8-inch square pan.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the eggs one at a time, then add molasses and mix until smooth.
  4. In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon.
  5. Add the dry ingredients to the wet mixture alternately with buttermilk, mixing just until combined.
  6. Pour batter into the prepared pan and smooth the top.
  7. Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean. Let cool in pan.
  8. For the Caramel Frosting:
  9. In a saucepan over medium heat, melt the butter and stir in the brown sugar.
  10. Bring to a gentle boil and cook for 2–3 minutes, stirring constantly.
  11. Add heavy cream, vanilla, and a pinch of salt. Stir and bring back to a boil.
  12. Remove from heat and let cool slightly, then beat until thickened and spreadable.
  13. Frost the cooled cake and serve.

Notes

  • Store leftovers in an airtight container at room temperature for up to 2 days.
  • For a stronger caramel flavor, add an extra tablespoon of molasses.
