Description
A spicy twist on classic sloppy joes featuring Cajun-seasoned ground chicken and colorful bell peppers served on toasted buns.
Ingredients

- 1 lb ground chicken
- 1 tbsp olive oil
- 1/2 cup red bell pepper, diced
- 1/2 cup green bell pepper, diced
- 1/2 cup onion, finely chopped
- 2 cloves garlic, minced
- 2 tbsp tomato paste
- 1/2 cup chicken broth
- 1 tbsp Worcestershire sauce
- 1 tbsp Cajun seasoning (adjust to taste)
- Salt and black pepper to taste
- 4 burger buns, toasted
- Optional: shredded cheddar, jalapeños, hot sauce
Instructions
- Heat olive oil in a skillet over medium heat.
- Add onions and bell peppers. Cook until soft (3-4 minutes).
- Add garlic and cook for 30 seconds.
- Add ground chicken. Break it apart and cook until browned (5-6 minutes).
- Stir in tomato paste, Cajun seasoning, Worcestershire sauce, salt, and pepper.
- Pour in chicken broth. Simmer for 5 minutes until thickened.
- Toast buns lightly.
- Spoon chicken mixture onto buns. Top with optional toppings if desired.
Notes
- For extra heat, add 1/4 tsp cayenne pepper.
- Ground turkey works as a substitute for chicken.
- Store leftovers in an airtight container for up to 3 days.
