Description
A creamy and spicy Cajun White Chicken Chili with tender chicken, white beans, and a blend of Cajun spices.
Ingredients

- 2 large chicken breasts (or thighs)
- 2 cups white beans (cannellini or great northern)
- 4 cups chicken broth
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 red bell pepper, diced
- 1 jalapeño, sliced
- 2 tablespoons Cajun seasoning
- 4 ounces cream cheese
- 0.5 cup heavy cream
- 1 tablespoon lime juice
- 0.25 cup fresh cilantro, chopped
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chicken and cook until browned, then remove and set aside.
- In the same pot, sauté onion, garlic, bell pepper, and jalapeño until softened.
- Stir in Cajun seasoning and cook for 1 minute.
- Add chicken back to the pot along with white beans and chicken broth.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Stir in cream cheese and heavy cream until fully melted.
- Add lime juice and cilantro, then season with salt and pepper.
- Simmer for another 5 minutes before serving.
Notes
- For extra heat, add more jalapeños or a pinch of cayenne pepper.
- Substitute Greek yogurt for cream cheese if preferred.
- Garnish with extra cilantro or shredded cheese.
