Description

A creamy and spicy Cajun White Chicken Chili with tender chicken, white beans, and a blend of Cajun spices.


Ingredients

  • 2 large chicken breasts (or thighs)
  • 2 cups white beans (cannellini or great northern)
  • 4 cups chicken broth
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 jalapeño, sliced
  • 2 tablespoons Cajun seasoning
  • 4 ounces cream cheese
  • 0.5 cup heavy cream
  • 1 tablespoon lime juice
  • 0.25 cup fresh cilantro, chopped
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chicken and cook until browned, then remove and set aside.
  3. In the same pot, sauté onion, garlic, bell pepper, and jalapeño until softened.
  4. Stir in Cajun seasoning and cook for 1 minute.
  5. Add chicken back to the pot along with white beans and chicken broth.
  6. Bring to a boil, then reduce heat and simmer for 20 minutes.
  7. Stir in cream cheese and heavy cream until fully melted.
  8. Add lime juice and cilantro, then season with salt and pepper.
  9. Simmer for another 5 minutes before serving.

Notes

  • For extra heat, add more jalapeños or a pinch of cayenne pepper.
  • Substitute Greek yogurt for cream cheese if preferred.
  • Garnish with extra cilantro or shredded cheese.
