Description

Cannoli Cheesecake Bars are a delicious blend of classic cannoli and cheesecake, creating a rich and creamy dessert.


Ingredients

  • 1 1/2 cups graham cracker crumbs – packed tightly in the measuring cup (about 12 full sheets)
  • 1/4 cup granulated sugar – for that sweet crust
  • 6 tbsp melted butter – unsalted
  • 16 oz cream cheese – full-fat, softened to room temp
  • 1/2 cup granulated sugar – dissolves best if added gradually
  • 1 tsp vanilla extract – pure vanilla
  • 2 large eggs – room temperature
  • 1 cup ricotta cheese – whole milk ricotta
  • 1/2 cup mini chocolate chips – distribute perfectly
  • 1/4 cup powdered sugar – for that gorgeous snowy finish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix graham cracker crumbs, 1/4 cup granulated sugar, and melted butter.
  3. Press the mixture into the bottom of a 9x13 inch baking dish.
  4. In a large mixing bowl, beat cream cheese until smooth.
  5. Add 1/2 cup granulated sugar and vanilla extract; mix until combined.
  6. Add eggs one at a time, mixing well after each addition.
  7. Fold in ricotta cheese and mini chocolate chips.
  8. Pour the filling over the crust and smooth the top.
  9. Bake for 30-35 minutes, until set.
  10. Let cool, then dust with powdered sugar before serving.
