Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- Cream butter, brown sugar, and granulated sugar until light and fluffy.
- Beat in eggs one at a time, then stir in vanilla extract.
- In a separate bowl, whisk flour, baking soda, cinnamon, and salt.
- Gradually mix dry ingredients into the wet mixture.
- Fold in oats, diced apples, and caramel bits.
- Drop rounded tablespoons of dough onto prepared baking sheets.
- Bake for 10-12 minutes or until edges are golden.
- Cool on baking sheets for 5 minutes before transferring to wire racks.
