- ¾ cup (170g) unsalted butter, softened
- ¾ cup (150g) brown sugar
- ¼ cup (50g) granulated sugar
- 1 large egg
- 2 tsp vanilla extract
- 2 cups (240g) all-purpose flour
- ½ tsp baking soda
- ¼ tsp salt
- 4 oz (115g) cream cheese, softened
- 2 tbsp granulated sugar
- ½ tsp vanilla extract
- ¼ cup (60ml) caramel sauce
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, cream together the butter, brown sugar, and granulated sugar until smooth.
- Add the egg and vanilla extract, mixing until combined.
- In another bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- In a separate bowl, mix the cream cheese, granulated sugar, and vanilla extract until smooth to prepare the cheesecake filling.
- Take a small amount of cookie dough, flatten it, and place a spoonful of cheesecake filling in the center.
- Wrap the cookie dough around the filling, sealing it completely.
- Place the cookies on a baking sheet lined with parchment paper.
- Bake for 12-15 minutes, or until the edges are lightly golden.
- Remove from the oven and drizzle with caramel sauce while warm.

- Ensure the cream cheese is softened for easy mixing.
- Chill the cookie dough for 30 minutes for better shaping.
