Description
A spiced pumpkin bread with chai flavors, sweetened with maple syrup and topped with a maple glaze.

- 1/4 cup butter, melted
- 1 cup pumpkin puree
- 1/3 cup Greek yogurt
- 2 large eggs
- 1/2 cup light brown sugar (or coconut sugar)
- 1/4 cup maple syrup
- 1 teaspoon vanilla extract
- 1-1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon cardamom
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground allspice
- 1/4 teaspoon ground cloves
- 1/2 cup powdered sugar (for glaze)
- 2 tablespoons maple syrup (for glaze)
- 1-2 teaspoons milk (for glaze)
Instructions
- Preheat oven to 350°F (175°C). Grease a loaf pan.
- In a bowl, mix melted butter, pumpkin puree, yogurt, eggs, brown sugar, maple syrup, and vanilla.
- In another bowl, whisk flour, baking soda, baking powder, salt, cinnamon, cardamom, ginger, allspice, and cloves.
- Combine wet and dry ingredients until just mixed.
- Pour batter into the loaf pan and bake for 50-60 minutes, or until a toothpick comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack.
- For the glaze, whisk powdered sugar, maple syrup, and milk until smooth. Drizzle over cooled bread.
Notes
- Use pure pumpkin puree, not pumpkin pie filling.
- Adjust spices to taste.
- Store leftovers in an airtight container for up to 3 days.
