Description

A delicious and creamy Cajun chicken pasta dish cooked in one skillet.


Ingredients

  • 1 pound Boneless Skinless Chicken Breasts cut into bite-sized chunks
  • 12 oz Rotini Pasta
  • 2 tablespoons Olive Oil
  • 2 tablespoons Cajun Seasoning
  • 1 teaspoon Garlic Powder
  • 1/2 teaspoon Onion Powder
  • Salt and Pepper to taste
  • 4 cloves Garlic minced
  • 1 tablespoon Butter
  • 1 cup Heavy Cream
  • 1/2 cup Chicken Broth
  • 1 cup Mozzarella Cheese shredded
  • 1/2 cup Parmesan Cheese grated
  • 1/2 cup Cheddar Cheese shredded
  • 1/4 cup Fresh Parsley chopped

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add chicken chunks, season with Cajun seasoning, garlic powder, onion powder, salt, and pepper. Cook until browned.
  3. Cook the rotini pasta according to package instructions. Drain and set aside.
  4. Add minced garlic to the skillet with the chicken. Sauté for a minute.
  5. Stir in butter, heavy cream, and chicken broth. Bring to a simmer.
  6. Add cooked pasta to the skillet and mix well.
  7. Add mozzarella, parmesan, and cheddar cheese. Stir until melted and smooth.
  8. Garnish with fresh parsley before serving.

  • Substitute pasta as desired.
  • Adjust spice levels to taste.
  • For a lighter version, use light cream or coconut cream.
