- 3 pounds russet potatoes, peeled and cubed
- 1/2 cup unsalted butter
- 1 cup sour cream
- 1 cup heavy cream
- 2 cups shredded sharp cheddar cheese (or more, to taste)
- 1 cup shredded mozzarella cheese
- 1/4 cup chopped green onions
- 2 teaspoons garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1/2 teaspoon ground black pepper
- Salt, to taste
- 1/2 cup crispy fried onions (optional, for topping)
- 1 tablespoon olive oil or butter (for greasing the baking dish)
Instructions
- Preheat oven to 375°F (190°C). Grease a baking dish with olive oil or butter.
- Boil the cubed potatoes in salted water until tender, about 15 minutes. Drain.
- In a large bowl, mash the potatoes with butter, sour cream, and heavy cream until smooth.
- Stir in garlic powder, onion powder, paprika, black pepper, and salt.
- Fold in shredded cheddar and mozzarella cheeses, reserving some for topping.
- Transfer the mixture to the greased baking dish. Top with remaining cheese.
- Bake for 25-30 minutes until bubbly and golden.
- Optional: Sprinkle crispy fried onions on top before serving.
Notes
- For extra creaminess, add more sour cream or heavy cream.
- Adjust cheese quantities to your preference.
- Store leftovers in an airtight container in the fridge for up to 3 days.
