Delicious cherry cobbler muffins combining the flavors of fresh cherries with a sweet cobbler topping.
Ingredients

- 1 3/4 cups all-purpose flour
- 1/2 cup granulated sugar
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup milk
- 1/3 cup vegetable oil
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup pitted fresh cherries (or frozen cherries, thawed and drained)
- 1/2 cup all-purpose flour
- 1/3 cup brown sugar
- 1/2 teaspoon ground cinnamon
- 1/4 cup cold unsalted butter, diced
Instructions
- Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
- In a bowl, mix flour, sugar, baking powder, and salt for the muffins.
- Add milk, vegetable oil, egg, and vanilla extract. Stir until combined.
- Fold in cherries.
- Divide batter evenly among muffin cups.
- In another bowl, combine flour, brown sugar, and cinnamon for the topping.
- Cut in cold butter until crumbly.
- Sprinkle topping over muffin batter.
- Bake for 20-25 minutes or until golden brown.
- Cool before serving.
Notes
- Use fresh cherries for best flavor.
- If using frozen cherries, thaw and drain well.
- Store leftovers in an airtight container.
