Ingredients

  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • 1/3 cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup pitted fresh cherries (or frozen cherries, thawed and drained)
  • 1/2 cup all-purpose flour
  • 1/3 cup brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup cold unsalted butter, diced

Instructions

  1. Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
  2. In a bowl, mix flour, sugar, baking powder, and salt for the muffins.
  3. Add milk, vegetable oil, egg, and vanilla extract. Stir until combined.
  4. Fold in cherries.
  5. Divide batter evenly among muffin cups.
  6. In another bowl, combine flour, brown sugar, and cinnamon for the topping.
  7. Cut in cold butter until crumbly.
  8. Sprinkle topping over muffin batter.
  9. Bake for 20-25 minutes or until golden brown.
  10. Cool before serving.

Notes

  • Use fresh cherries for best flavor.
  • If using frozen cherries, thaw and drain well.
  • Store leftovers in an airtight container.
