Description
Chicken and Garlic Gravy served with Cheesy Mashed Potatoes.
Ingredients

- 4 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 2 cups chicken broth
- 1 tablespoon Worcestershire sauce
- 1 tablespoon fresh thyme, chopped (or 1 teaspoon dried thyme)
- 1 tablespoon butter
- 2 pounds potatoes, peeled and quartered
- ½ cup milk
- 1 cup shredded cheddar cheese
- ¼ cup sour cream
- Fresh parsley, chopped (for garnish)
Instructions
- Season chicken breasts with salt and pepper.
- Heat olive oil in a pan over medium heat.
- Add chicken breasts and cook until browned, about 5-7 minutes per side.
- Remove chicken and set aside.
- Add minced garlic to the pan and sauté for 1 minute.
- Pour in chicken broth and Worcestershire sauce.
- Add thyme and bring to a simmer.
- Return chicken to the pan and cover. Cook for 15-20 minutes until chicken is cooked through.
- While chicken cooks, boil potatoes in a pot of salted water until tender.
- Drain potatoes and return to the pot.
- Add milk, shredded cheddar cheese, and sour cream to the potatoes. Mash until smooth.
- Serve chicken with garlic gravy over mashed potatoes. Garnish with parsley.
Notes
- You can use dried thyme if fresh is not available.
- Adjust the amount of garlic based on your preference.
- For creamier mashed potatoes, add more milk or butter.
