Ingredients

  • 8 ounces corkscrew pasta (rotini or fusilli)
  • 1/2 cup Italian-style dressing
  • 1/2 cup mayonnaise
  • 2 cups cooked chicken, chopped
  • 6 slices cooked bacon, crumbled
  • 1 cup cherry tomatoes, halved
  • 1/2 cup shredded Muenster cheese (or Monterey Jack as a substitute)
  • 1/2 cup celery, diced
  • 1/2 cup green bell pepper, chopped
  • 1 ripe avocado, diced
  • Salt and pepper to taste

Instructions

  1. Cook pasta according to package instructions, then drain and rinse with cold water.
  2. In a large bowl, mix Italian dressing and mayonnaise.
  3. Add cooked pasta, chicken, bacon, tomatoes, cheese, celery, bell pepper, and avocado to the bowl.
  4. Toss gently to coat all ingredients with the dressing mixture.
  5. Season with salt and pepper to taste.
  6. Chill for at least 30 minutes before serving.
