A delicious chicken pita filled with herby ranch slaw.


Ingredients

  • 2 boneless skinless chicken breasts (about 1 pound)
  • 2 teaspoons olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 1/2 cups shredded green cabbage
  • 1/2 cup shredded carrot
  • 2 tablespoons chopped fresh dill
  • 1/4 cup chopped fresh parsley
  • 1/2 cup ranch dressing
  • 4 pita breads

Instructions

  1. Preheat grill or skillet over medium heat.
  2. Rub chicken breasts with olive oil, garlic powder, salt, and pepper.
  3. Grill or cook chicken for 6-7 minutes on each side until fully cooked.
  4. Remove chicken and let it rest for a few minutes before slicing.
  5. In a bowl, combine cabbage, carrot, dill, and parsley.
  6. Add ranch dressing to the slaw and mix well.
  7. Warm pita breads in a skillet or microwave.
  8. Fill each pita with sliced chicken and top with herby ranch slaw.

  • Adjust seasoning to taste.
  • Use leftover chicken for salads or wraps.
