A flavorful Chicken Ranch Quesadilla that's easy to make and perfect for any meal.
Ingredients

- 2 cups cooked chicken breast, shredded
- 1 cup shredded cheese (cheddar or mozzarella)
- ½ cup ranch dressing
- 4 medium flour tortillas
- 1 tablespoon olive oil
- ¼ cup diced green onions
- ¼ cup diced bell pepper
- ¼ teaspoon black pepper
Instructions
- In a bowl, mix shredded chicken, cheese, ranch dressing, green onions, bell pepper, and black pepper.
- Heat olive oil in a skillet over medium heat.
- Place one tortilla in the skillet.
- Spoon half of the chicken mixture onto one half of the tortilla.
- Fold the tortilla over the filling and cook until golden brown, about 3-4 minutes.
- Flip and cook the other side until golden and the cheese melts.
- Repeat with the remaining tortillas and filling.
- Cut into wedges and serve.
Notes
- Serve with extra ranch dressing for dipping.
- Customize with other vegetables if desired.
