- 4 boneless skinless chicken breasts (pounded 1/2-inch thick)

- 1 1/2 cups all-purpose flour

- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon black pepper
- FRYING
- 3 cups vegetable oil (for frying)
- CREAMY HOMEMADE SAUCE
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 2 teaspoons hot sauce
- 1 tablespoon lemon juice
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1 teaspoon honey (optional)
- TO SERVE
- 4 brioche burger buns
- 8 dill pickle slices
- 4 lettuce leaves
- 1 small tomato (sliced, optional)
Instructions
- In a bowl, mix buttermilk, hot sauce, salt, paprika, cayenne, garlic powder, and onion powder. Add chicken, coat well, and marinate for at least 30 minutes.
- In another bowl, combine flour, cornstarch, paprika, garlic powder, onion powder, salt, cayenne, and black pepper for the dredge.
- Heat oil in a deep pan to 350°F (175°C).
- Dredge each chicken breast in the flour mixture, pressing firmly to coat. Shake off excess.
- Fry chicken for 4-5 minutes per side until golden brown and cooked through. Drain on paper towels.
- For the sauce, mix mayonnaise, sour cream, hot sauce, lemon juice, smoked paprika, garlic powder, and honey (if using).
- Toast brioche buns lightly.
- Spread sauce on buns, then layer with chicken, pickles, lettuce, and tomato (if using).
- Serve immediately.

- Pound chicken evenly for uniform cooking.
- Use a thermometer to check oil temperature.
- Adjust hot sauce to taste.
- Honey adds a slight sweetness to the sauce.
