    • 4 boneless skinless chicken breasts (pounded 1/2-inch thick)
    • 1 cup buttermilk
    • 1 tablespoon hot sauce
    • 1 teaspoon kosher salt
    • 1 teaspoon paprika
    • 1/2 teaspoon cayenne pepper
    • 1/2 teaspoon garlic powder
    • 1/2 teaspoon onion powder
  • DREDGE
    • 1 1/2 cups all-purpose flour
    • 1/2 cup cornstarch
    • 1 teaspoon paprika
    • 1 teaspoon garlic powder
    • 1 teaspoon onion powder
    • 1 teaspoon kosher salt
    • 1/2 teaspoon cayenne pepper
    • 1/2 teaspoon black pepper
  • FRYING
    • 3 cups vegetable oil (for frying)
  • CREAMY HOMEMADE SAUCE
    • 1/2 cup mayonnaise
    • 1/4 cup sour cream
    • 2 teaspoons hot sauce
    • 1 tablespoon lemon juice
    • 1/2 teaspoon smoked paprika
    • 1/2 teaspoon garlic powder
    • 1 teaspoon honey (optional)
  • TO SERVE
    • 4 brioche burger buns
    • 8 dill pickle slices
    • 4 lettuce leaves
    • 1 small tomato (sliced, optional)

Instructions

  1. In a bowl, mix buttermilk, hot sauce, salt, paprika, cayenne, garlic powder, and onion powder. Add chicken, coat well, and marinate for at least 30 minutes.
  2. In another bowl, combine flour, cornstarch, paprika, garlic powder, onion powder, salt, cayenne, and black pepper for the dredge.
  3. Heat oil in a deep pan to 350°F (175°C).
  4. Dredge each chicken breast in the flour mixture, pressing firmly to coat. Shake off excess.
  5. Fry chicken for 4-5 minutes per side until golden brown and cooked through. Drain on paper towels.
  6. For the sauce, mix mayonnaise, sour cream, hot sauce, lemon juice, smoked paprika, garlic powder, and honey (if using).
  7. Toast brioche buns lightly.
  8. Spread sauce on buns, then layer with chicken, pickles, lettuce, and tomato (if using).
  9. Serve immediately.

  • Use a thermometer to check oil temperature.
