A quick and healthy chicken zucchini stir fry packed with flavor.


Ingredients

  • 1 lb boneless, skinless chicken breast, thinly sliced
  • 2 medium zucchinis, sliced into half-moons
  • 1 red bell pepper, sliced (optional)
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 1 tablespoon oyster sauce (optional)
  • 1 tablespoon honey or brown sugar
  • 1 teaspoon sesame oil
  • 2 tablespoons vegetable oil (for stir-frying)
  • Salt and pepper to taste
  • Sesame seeds and green onions, for garnish

Instructions

  1. Heat vegetable oil in a large skillet over medium-high heat.
  2. Add the sliced chicken and cook until golden brown.
  3. Add minced garlic and stir for 30 seconds.
  4. Add zucchini and red bell pepper, stir-fry for 3-4 minutes.
  5. Pour in soy sauce, oyster sauce, honey, and sesame oil. Stir to combine.
  6. Cook for another 2-3 minutes until vegetables are tender.
  7. Season with salt and pepper to taste.
  8. Garnish with sesame seeds and green onions before serving.

  • Serve with rice or noodles for a complete meal.
