- 2 tablespoons honey
- 1 tablespoon adobo sauce (from canned chipotle peppers)
- 1 chipotle pepper (finely minced)
- 1 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 1/2 cups fresh pineapple (diced)
- 1/4 cup red onion (finely chopped)
- 1/2 jalapeño (seeded and minced)
- 2 tablespoons fresh cilantro (chopped)
- juice of 1 lime
- pinch of salt
- 8 small corn or flour tortillas
- 1/2 cup shredded cabbage or lettuce (optional)

- extra cilantro for garnish
Instructions
- Preheat your grill or skillet over medium heat.
- In a bowl, mix olive oil, honey, adobo sauce, minced chipotle, garlic powder, smoked paprika, salt, and black pepper.
- Coat the salmon fillets with the marinade.
- Grill or cook the salmon for about 4-5 minutes per side until cooked through.
- While the salmon cooks, prepare the pineapple salsa by combining diced pineapple, red onion, jalapeño, cilantro, lime juice, and a pinch of salt in a bowl.
- Warm the tortillas on the grill or in a skillet.
- Assemble the tacos by placing salmon on the tortillas and topping with pineapple salsa and shredded cabbage or lettuce.
- Garnish with lime wedges and extra cilantro.
Notes
- Adjust the spiciness by adding more or less jalapeño in the salsa.
