Ingredients

  • 1 1/2 pounds salmon fillets (skin removed)
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • 1 tablespoon adobo sauce (from canned chipotle peppers)
  • 1 chipotle pepper (finely minced)
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 1/2 cups fresh pineapple (diced)
  • 1/4 cup red onion (finely chopped)
  • 1/2 jalapeño (seeded and minced)
  • 2 tablespoons fresh cilantro (chopped)
  • juice of 1 lime
  • pinch of salt
  • 8 small corn or flour tortillas
  • 1/2 cup shredded cabbage or lettuce (optional)
  • lime wedges
  • extra cilantro for garnish

Instructions

  1. Preheat your grill or skillet over medium heat.
  2. In a bowl, mix olive oil, honey, adobo sauce, minced chipotle, garlic powder, smoked paprika, salt, and black pepper.
  3. Coat the salmon fillets with the marinade.
  4. Grill or cook the salmon for about 4-5 minutes per side until cooked through.
  5. While the salmon cooks, prepare the pineapple salsa by combining diced pineapple, red onion, jalapeño, cilantro, lime juice, and a pinch of salt in a bowl.
  6. Warm the tortillas on the grill or in a skillet.
  7. Assemble the tacos by placing salmon on the tortillas and topping with pineapple salsa and shredded cabbage or lettuce.
  8. Garnish with lime wedges and extra cilantro.

Notes

  • Adjust the spiciness by adding more or less jalapeño in the salsa.
