- 2 cups cooked chicken, shredded
- 1/2 cup ranch dressing
- 2 tablespoons chipotle sauce (or adobo sauce from canned chipotles)
- 1 cup shredded lettuce
- 1 cup diced tomatoes
- 1 cup shredded cheese (cheddar or Mexican blend)
- 4 large flour tortillas
- 1 avocado, sliced (optional)
- Olive oil (for grilling)
- Salt and pepper to taste
Instructions
- Mix ranch dressing and chipotle sauce in a bowl.
- Toss shredded chicken with half of the chipotle ranch mixture.
- Heat a skillet or grill pan over medium heat and lightly coat with olive oil.
- Warm each tortilla briefly on the skillet.
- Layer chicken, lettuce, tomatoes, cheese, and avocado (if using) in the center of each tortilla.
- Drizzle remaining chipotle ranch sauce over the filling.
- Fold the sides of the tortilla inward and roll tightly.
- Grill the burrito seam-side down for 2-3 minutes until golden and crisp.
- Flip and grill the other side for another 2 minutes.
- Serve warm.
Notes
- Use leftover rotisserie chicken for convenience.
- Adjust chipotle sauce for desired spiciness.
- Add rice or beans for extra bulk.
