- ⅓ cup unsweetened cocoa powder (30 grams)
- ½ teaspoon baking soda
- ¼ teaspoon salt
- Frosting
- 1½ cups powdered icing sugar
- ½ cup unsalted butter (room temperature)
- 1 tablespoon milk
- ½-1 teaspoon mint extract (depending on your tastes)
- green food coloring (optional)
- Ganache
- ¾ cup semisweet chocolate chips or chopped chocolate 130 grams
- 1 tablespoon oil
Instructions
- Preheat oven to 350°F (175°C).
- Cream butter and sugar together until light and fluffy.
- Add vanilla and egg, mix well.
- In a separate bowl, whisk flour, cocoa powder, baking soda, and salt.
- Gradually add dry ingredients to wet ingredients, mixing until combined.
- Drop spoonfuls of dough onto a baking sheet.
- Bake for 10-12 minutes, then cool on a wire rack.
- For frosting, beat butter, powdered sugar, milk, mint extract, and food coloring until smooth.
- Spread frosting on cooled cookies.
- For ganache, melt chocolate and oil together, then drizzle over frosted cookies.
- Let ganache set before serving.
