Delicious chocolate peanut butter muffins that are perfect for breakfast or a snack.
Ingredients

- 3 cups (360g) all-purpose flour
- 1 cup (84g) natural unsweetened cocoa powder
- 1 ½ cup (300g) granulated sugar
- 4 tsp baking powder
- 1 tsp baking soda
- 1 tsp salt
- 3 large eggs
- 1 ½ cup (360ml) buttermilk
- ½ cup (118ml) vegetable oil
- 1 tsp vanilla extract
- ⅔ cup (167g) creamy peanut butter
Instructions
- Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners.
- In a large bowl, whisk together flour, cocoa powder, sugar, baking powder, baking soda, and salt.
- In another bowl, beat eggs, buttermilk, vegetable oil, and vanilla extract until smooth.
- Pour wet ingredients into dry ingredients and mix until just combined.
- Fold in peanut butter, leaving some swirls.
- Spoon batter into muffin cups, filling each about ⅔ full.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Let cool in the pan for 5 minutes, then transfer to a wire rack.
Notes
- Store in an airtight container for up to 3 days.
- For extra peanut flavor, add chopped peanuts on top before baking.
- Replace buttermilk with regular milk mixed with 1 tbsp lemon juice if needed.
