  • 3/4 cup strawberry jam or preserves (seedless preferred)
  • 1 teaspoon lemon juice (optional, brightens flavor)
  • 1 cup unsalted butter, softened
  • 3 cups powdered sugar, sifted
  • 1/4 cup thick strawberry puree or strawberry jam (not too runny)
  • 1 teaspoon vanilla extract
  • Pinch of fine salt
  • 12 tablespoons heavy cream as needed to adjust consistency
  • Fresh whole strawberries, hulled and dried
  • Chocolate drizzle or shaved chocolate (optional)

Instructions

  1. Preheat oven to 350°F. Line a muffin tin with cupcake liners.
  2. Whisk flour, sugar, cocoa powder, baking powder, baking soda, and salt in a bowl.
  3. Mix oil, eggs, vanilla, and buttermilk. Gradually add dry ingredients.
  4. Stir in hot coffee or water until smooth.
  5. Fill cupcake liners 2/3 full. Bake 18-20 minutes. Cool completely.
  6. Core cupcakes and fill with strawberry jam.
  7. Beat butter until creamy. Add powdered sugar, strawberry puree, vanilla, and salt.
  8. Adjust consistency with heavy cream if needed.
  9. Frost cupcakes and garnish with fresh strawberries and chocolate if desired.
