Ingredients

  • 1 1/4 pounds flank steak
  • 1/3 cup olive oil
  • 1 lime, zested and juiced
  • 1 tablespoon minced garlic
  • 1/2 cup minced cilantro
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon pepper
  • 2 cups cooked white rice
  • 1 can black beans, drained and rinsed
  • 1 cup corn
  • 1 avocado
  • 1 batch cilantro lime crema
  • Chopped lettuce (optional)
  • Sauteed bell peppers and onions (optional)

Instructions

  1. Prepare the marinade by mixing olive oil, lime juice, lime zest, garlic, cilantro, salt, and pepper.
  2. Marinate the flank steak for at least 30 minutes.
  3. Grill or pan-sear the steak over medium-high heat to your desired doneness.
  4. Let the steak rest for a few minutes before slicing.
  5. In bowls, layer cooked rice, black beans, corn, and sliced steak.
  6. Top with avocado, cilantro lime crema, and any optional add-ins.
