Ingredients

  • 1 ½ tsp ground cinnamon
  • 1 tsp baking powder
  • ¼ tsp salt
  • 2 tbsp instant coffee granules
  • 1 tsp vanilla extract
  • ½ cup unsalted butter, melted
  • ¾ cup brown sugar
  • 1 large egg
  • ¼ cup granulated sugar (for rolling)
  • ¼ cup powdered sugar (for rolling)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, cinnamon, baking powder, and salt.
  3. Dissolve instant coffee granules in vanilla extract.
  4. In another bowl, mix melted butter and brown sugar until smooth. Add the egg and coffee-vanilla mixture, stirring well.
  5. Gradually fold in the dry ingredients until combined.
  6. Shape dough into small balls, roll in granulated sugar, then powdered sugar.
  7. Place on the baking sheet, spacing them apart. Bake for 10-12 minutes.
  8. Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
