Ingredients

  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • ½ tsp salt
  • ½ cup unsalted butter, softened
  • ½ cup granulated sugar
  • ½ cup brown sugar, packed
  • 1 large egg
  • 2 tsp vanilla extract
  • For the Filling:
    • ½ cup brown sugar, packed
    • 2 tsp ground cinnamon

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking powder, cinnamon, and salt.
  3. In another bowl, cream butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in egg and vanilla extract.
  5. Gradually mix in the dry ingredients until a dough forms.
  6. For the filling, mix brown sugar and cinnamon in a small bowl.
  7. Roll out the dough into a rectangle. Sprinkle the filling evenly over the dough.
  8. Roll the dough tightly into a log and slice into cookies.
  9. Place cookies on baking sheets and bake for 10-12 minutes.
  10. Let cool before serving.

  • Store in an airtight container for up to 3 days.
  • For extra flavor, add a glaze of powdered sugar and milk.
