Ingredients

  • 3 ripe bananas, mashed
  • 1/3 cup melted butter
  • 3/4 cup sugar
  • 1 egg, beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1 1/2 cups all-purpose flour
  • 1/3 cup sugar (for cinnamon swirl)
  • 1 tablespoon ground cinnamon (for cinnamon swirl)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a loaf pan.
  2. In a bowl, mix mashed bananas and melted butter.
  3. Add sugar, beaten egg, and vanilla extract. Mix well.
  4. Stir in baking soda, salt, and flour until just combined.
  5. In a small bowl, mix 1/3 cup sugar and cinnamon for the swirl.
  6. Pour half the banana batter into the loaf pan.
  7. Sprinkle half the cinnamon-sugar mixture over the batter.
  8. Add the remaining batter and top with the rest of the cinnamon-sugar.
  9. Bake for 50-60 minutes or until a toothpick comes out clean.
  10. Let cool before slicing.

Notes

  • Use very ripe bananas for the best flavor.
  • Do not overmix the batter to keep the bread tender.
  • Check for doneness at 50 minutes to avoid overbaking.
