A simple and delicious classic Christmas toffee recipe with a buttery, crunchy texture and a hint of vanilla.

- 1 cup chopped pecans or almonds
- 1 cup granulated sugar (200 grams)
- 1 cup butter (226 grams)
- 1/2 teaspoon salt
- 1/4 cup water (60 ml)
- 1 teaspoon vanilla
- Chocolate chips
- Additional chopped pecans for garnish
- Flaked sea salt (optional)
Instructions
- Line a baking sheet with parchment paper and spread the chopped pecans or almonds evenly.
- In a saucepan, combine sugar, butter, salt, and water. Cook over medium heat, stirring constantly until the mixture reaches 300°F (hard crack stage).
- Remove from heat and stir in vanilla.
- Pour the hot toffee mixture over the nuts on the baking sheet.
- While still warm, sprinkle chocolate chips over the toffee. Let sit for a minute to melt, then spread evenly.
- Garnish with additional chopped nuts and flaked sea salt if desired.
- Allow to cool completely before breaking into pieces.
