- 4 cups Chicken broth
- 1 can Coconut milk
- 3 cloves Garlic, minced
- 1 inch Ginger, grated
- 1 pound Boneless chicken thighs
- 1 teaspoon Salt
- 1/2 teaspoon Black pepper
- 1 cup Long-grain white rice or jasmine rice
- 2 stalks Green onions
- 1 tablespoon Curry powder
- 1/2 teaspoon Turmeric
- 1/4 cup Fresh cilantro
- 2 pieces Lime wedges
Instructions
- In a large pot, combine chicken broth, coconut milk, garlic, and ginger. Bring to a simmer.
- Add chicken thighs, salt, and black pepper. Cook until the chicken is tender.
- Remove chicken and shred it. Return to the pot.
- Add rice, curry powder, and turmeric. Stir well and cook until rice is tender.
- Serve hot, garnished with green onions, cilantro, and lime wedges.

- Adjust curry powder to your taste.
- Use jasmine rice for a fragrant option.
