Ingredients

  • 4 cups Chicken broth
  • 1 can Coconut milk
  • 3 cloves Garlic, minced
  • 1 inch Ginger, grated
  • 1 pound Boneless chicken thighs
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • 1 cup Long-grain white rice or jasmine rice
  • 2 stalks Green onions
  • 1 tablespoon Curry powder
  • 1/2 teaspoon Turmeric
  • 1/4 cup Fresh cilantro
  • 2 pieces Lime wedges

Instructions

  1. In a large pot, combine chicken broth, coconut milk, garlic, and ginger. Bring to a simmer.
  2. Add chicken thighs, salt, and black pepper. Cook until the chicken is tender.
  3. Remove chicken and shred it. Return to the pot.
  4. Add rice, curry powder, and turmeric. Stir well and cook until rice is tender.
  5. Serve hot, garnished with green onions, cilantro, and lime wedges.

  • Adjust curry powder to your taste.
  • Use jasmine rice for a fragrant option.
