Description

A light and fluffy coconut cake topped with cream cheese frosting and sweetened shredded coconut.


Ingredients

  • 1 box white cake mix (15.25 oz), prepared according to package instructions
  • 1 teaspoon coconut extract (optional, for extra flavor)
  • 1 (8 oz) package cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon coconut extract
  • 1 (8 oz) container whipped topping (Cool Whip), thawed
  • 2 cups sweetened shredded coconut, toasted or untoasted (your preference)

Instructions

  1. Prepare the white cake mix according to package instructions.
  2. Add 1 teaspoon of coconut extract to the batter for extra flavor.
  3. Bake the cake and let it cool completely.
  4. In a mixing bowl, beat the softened cream cheese until smooth.
  5. Add powdered sugar, vanilla extract, and coconut extract to the cream cheese, mixing until well combined.
  6. Fold in the whipped topping until smooth.
  7. Spread the cream cheese frosting over the cooled cake.
  8. Top with sweetened shredded coconut.
