- ¾ cup (150g) granulated sugar
- ½ cup (65g) powdered sugar
- 2 cups (250g) all-purpose flour
- 1½ cups (120g) desiccated coconut
- 1 teaspoon baking powder
- ½ teaspoon salt
- 1 large egg
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (180°C) and line a baking sheet with parchment paper.
- In a bowl, cream the butter, granulated sugar, and powdered sugar until light and fluffy.
- Add the egg and vanilla extract, mixing until well combined.
- In another bowl, whisk together the flour, desiccated coconut, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing until a dough forms.
- Roll the dough into small balls and place them on the prepared baking sheet.
- Flatten each ball slightly with a fork or your fingers.
- Bake for 12-15 minutes, or until the edges are lightly golden.
- Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
- Store the cookies in an airtight container for up to a week.
- You can toast the desiccated coconut for extra flavor.
- For chewier cookies, slightly underbake them.
