- 1 tablespoon lime juice
- Salt and pepper to taste
- 1 tablespoon honey (optional, for sweetness)
- 4 cod fillets (about 6 oz each)

Instructions
- Preheat your oven to 375°F (190°C).
- In a bowl, combine coconut milk, olive oil, curry powder, turmeric, ginger, chili powder, garlic, lime juice, salt, and pepper.
- Mix well to create the sauce.
- Place cod fillets in a baking dish and season with salt and pepper.
- Pour the coconut curry sauce over the cod fillets.
- Bake for 20-25 minutes, or until the cod is cooked through and flakes easily with a fork.
- Garnish with fresh cilantro or parsley and lime wedges if desired.
