  • 1 tablespoon olive oil
  • 1 tablespoon curry powder
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground ginger
  • 1/2 teaspoon chili powder (optional for heat)
  • 2 garlic cloves, minced
  • 1 tablespoon lime juice
  • Salt and pepper to taste
  • 1 tablespoon honey (optional, for sweetness)
  • 4 cod fillets (about 6 oz each)
  • Salt and pepper to taste
  • Fresh cilantro or parsley, chopped (optional)
  • Lime wedges (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, combine coconut milk, olive oil, curry powder, turmeric, ginger, chili powder, garlic, lime juice, salt, and pepper.
  3. Mix well to create the sauce.
  4. Place cod fillets in a baking dish and season with salt and pepper.
  5. Pour the coconut curry sauce over the cod fillets.
  6. Bake for 20-25 minutes, or until the cod is cooked through and flakes easily with a fork.
  7. Garnish with fresh cilantro or parsley and lime wedges if desired.
