Description

A rich and creamy coffee cheesecake with a chocolate cookie crust and luscious ganache.


Ingredients

  • 24 cookies Oreos, crushed
  • 6 tablespoons salted butter, melted
  • 1 tablespoon espresso powder (optional)
  • 16 ounces cream cheese, full-fat and softened
  • 3/4 cup granulated sugar
  • 1 teaspoon coffee extract
  • 3 large eggs, room temperature
  • 1 cup heavy cream (or non-dairy alternative)
  • 1/2 cup cold brew coffee (or strong brewed coffee)
  • 1 tablespoon lemon juice (or vinegar)
  • 1/4 teaspoon salt
  • 1/4 cup all-purpose flour (optional for gluten-free)
  • 8 ounces bittersweet chocolate, chopped
  • 1 cup heavy cream (or non-dairy alternative)
  • 1 cup powdered sugar (optional)
  • 1 teaspoon vanilla extract (optional)
  • Chocolate curls/sprinkles, to taste (optional)
  • Chocolate-covered espresso beans, to taste (optional)
  • 1 packet instant cheesecake pudding mix (optional)

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. Mix crushed Oreos, melted butter, and espresso powder in a bowl.
  3. Press the mixture into the bottom of a springform pan to form the crust.
  4. In a large bowl, beat the cream cheese and sugar until smooth.
  5. Add coffee extract, eggs, heavy cream, cold brew coffee, lemon juice, and salt. Mix well.
  6. If using, add flour and mix until combined.
  7. Pour the filling over the crust in the springform pan.
  8. Bake for about 50-60 minutes or until the center is set.
  9. Remove from the oven and cool completely.
  10. For the ganache, heat heavy cream and pour over chopped chocolate. Stir until smooth.
  11. Spread ganache over cooled cheesecake.
  12. Top with chocolate curls, espresso beans, or pudding mix if desired.
  13. Chill in the refrigerator for at least 4 hours before serving.

Notes

  • Use room temperature ingredients for a smoother filling.
  • Chill the cheesecake overnight for best results.
  • Adjust sweetness by adding more or less sugar.
