A rich and creamy coffee cheesecake with a chocolate cookie crust and luscious ganache.

- 24 cookies Oreos, crushed
- 6 tablespoons salted butter, melted
- 1 tablespoon espresso powder (optional)
- 16 ounces cream cheese, full-fat and softened
- 3/4 cup granulated sugar
- 1 teaspoon coffee extract
- 3 large eggs, room temperature
- 1 cup heavy cream (or non-dairy alternative)
- 1/2 cup cold brew coffee (or strong brewed coffee)
- 1 tablespoon lemon juice (or vinegar)
- 1/4 teaspoon salt
- 1/4 cup all-purpose flour (optional for gluten-free)
- 8 ounces bittersweet chocolate, chopped
- 1 cup heavy cream (or non-dairy alternative)
- 1 cup powdered sugar (optional)
- 1 teaspoon vanilla extract (optional)
- Chocolate curls/sprinkles, to taste (optional)
- Chocolate-covered espresso beans, to taste (optional)
- 1 packet instant cheesecake pudding mix (optional)
Instructions
- Preheat the oven to 325°F (160°C).
- Mix crushed Oreos, melted butter, and espresso powder in a bowl.
- Press the mixture into the bottom of a springform pan to form the crust.
- In a large bowl, beat the cream cheese and sugar until smooth.
- Add coffee extract, eggs, heavy cream, cold brew coffee, lemon juice, and salt. Mix well.
- If using, add flour and mix until combined.
- Pour the filling over the crust in the springform pan.
- Bake for about 50-60 minutes or until the center is set.
- Remove from the oven and cool completely.
- For the ganache, heat heavy cream and pour over chopped chocolate. Stir until smooth.
- Spread ganache over cooled cheesecake.
- Top with chocolate curls, espresso beans, or pudding mix if desired.
- Chill in the refrigerator for at least 4 hours before serving.
Notes
- Use room temperature ingredients for a smoother filling.
- Chill the cheesecake overnight for best results.
- Adjust sweetness by adding more or less sugar.
