Delicious Cookie Butter Cheesecake Cups made with creamy cookie butter and a Biscoff crust.


Ingredients

  • 1 cup Biscoff or speculoos cookie crumbs
  • 3 tbsp melted butter
  • 8 oz cream cheese, softened
  • ¾ cup powdered sugar
  • ½ cup cookie butter (plus extra for drizzling)
  • 1 tsp vanilla extract
  • 1 cup heavy whipping cream
  • Extra cookies for garnish (optional)

Instructions

  1. Mix cookie crumbs and melted butter, press into cups.
  2. Beat cream cheese, powdered sugar, cookie butter, and vanilla until smooth.
  3. Whip heavy cream until stiff peaks form, fold into cream cheese mixture.
  4. Spoon filling over crust, chill for 2 hours.
  5. Drizzle with extra cookie butter and garnish with cookies before serving.
