Description

Healthy and delicious carrot cake bars made with cottage cheese for added protein and moisture.


Ingredients

Scale
  • 1 cup cottage cheese
  • 2 large eggs
  • ½ cup almond flour (or oat flour)
  • ½ cup grated carrot
  • 23 tbsp maple syrup or honey (optional)
  • 1 tsp vanilla extract
  • ½ tsp baking powder
  • ¼ tsp cinnamon
  • Pinch of salt
  • Optional: 2–3 tbsp chopped walnuts or pecans

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Blend cottage cheese, eggs, maple syrup (or honey), and vanilla extract until smooth.
  3. Add almond flour, baking powder, cinnamon, and salt. Mix well.
  4. Fold in grated carrots and optional nuts.
  5. Pour batter into a greased or lined baking dish.
  6. Bake for 25-30 minutes or until set and lightly golden.
  7. Let cool before slicing into bars.

Notes

  • Store in an airtight container for up to 3 days.
  • For a vegan version, substitute eggs with flax eggs and use dairy-free cottage cheese.
