- 2 cups cottage cheese
- 1 cup rolled oats
- 1/2 cup dried cranberries
- 1/2 cup orange juice
- 1/4 cup honey
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 2 large eggs
- 1 tablespoon orange zest
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix cottage cheese, rolled oats, dried cranberries, orange juice, honey, vanilla extract, baking powder, cinnamon, and salt.
- Beat the eggs and add them to the mixture along with the orange zest.
- Stir until all ingredients are well combined.
- Pour the mixture into a greased baking dish.
- Bake for 30-35 minutes or until the top is golden brown.
- Let it cool slightly before serving.
Notes
- You can substitute honey with maple syrup if preferred.
- For a nutty flavor, add chopped walnuts or almonds.
