Ingredients

  • 1 cup rolled oats
  • 1/2 cup dried cranberries
  • 1/2 cup orange juice
  • 1/4 cup honey
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1 tablespoon orange zest

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix cottage cheese, rolled oats, dried cranberries, orange juice, honey, vanilla extract, baking powder, cinnamon, and salt.
  3. Beat the eggs and add them to the mixture along with the orange zest.
  4. Stir until all ingredients are well combined.
  5. Pour the mixture into a greased baking dish.
  6. Bake for 30-35 minutes or until the top is golden brown.
  7. Let it cool slightly before serving.
