Description

Ingredients

  • 1 lb boneless, skinless chicken breasts (cut into bite-sized pieces)
  • 1 tsp Cajun seasoning
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • Salt and black pepper, to taste
  • 2 tbsp olive oil
  • 6 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1/2 tsp crushed red pepper flakes (optional, adjust to taste)
  • 1 tsp Dijon mustard
  • Juice and zest of 1 lemon
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh chives, chopped
  • Salt and black pepper, to taste
  • 12 oz bowtie (farfalle) pasta
  • 2 cups broccoli florets
  • 1/2 cup reserved pasta water
  • 1/2 cup grated Parmesan cheese (plus extra for topping)

Instructions

  1. Cook bowtie pasta according to package instructions; drain and set aside.
  2. In a skillet, heat olive oil over medium heat. Season chicken with Cajun seasoning, garlic powder, smoked paprika, salt, and black pepper.
  3. Add chicken to the skillet and cook until browned and cooked through, about 5-7 minutes. Remove chicken and set aside.
  4. In the same skillet, melt unsalted butter. Add minced garlic and crushed red pepper flakes; sauté for 1-2 minutes.
  5. Stir in Dijon mustard, lemon juice, and lemon zest. Add cooked chicken back to the skillet.
  6. Add cooked pasta, broccoli florets, and reserved pasta water. Toss to combine.
  7. Stir in parsley and chives, adjusting seasoning with salt and black pepper as needed.
  8. Serve with grated Parmesan cheese on top.

Notes

  • Adjust spice level by varying crushed red pepper flakes.
  • Use fresh herbs for the best flavor.
  • Leftovers can be stored in an airtight container in the fridge.
