- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 12 oz bowtie (farfalle) pasta
- 2 cups broccoli florets
- 1 tsp Cajun seasoning
- 1/2 tsp garlic powder
- 1/2 tsp smoked paprika
- Salt to taste
- Black pepper to taste
- 1/2 tsp crushed red pepper flakes (optional)
- 1 tsp Dijon mustard
- Juice and zest of 1 lemon
- 2 tbsp fresh parsley, chopped
- 1 tbsp fresh chives, chopped
- 2 tbsp olive oil
- 6 tbsp unsalted butter
- 1/2 cup grated Parmesan cheese
- 1/2 cup reserved pasta water
Instructions
- Cook bowtie pasta according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add chicken and season with Cajun seasoning, garlic powder, smoked paprika, salt, and black pepper. Cook until browned and cooked through.
- Add broccoli florets to the skillet. Sauté until tender.
- Reduce heat to low. Stir in butter, Dijon mustard, lemon juice, and zest. Mix well.
- Add cooked pasta and reserved pasta water. Toss to combine and adjust sauce consistency.
- Stir in parsley, chives, and Parmesan cheese.
- Serve hot, garnished with extra Parmesan cheese.
