Description

A flavorful dish featuring chicken, bowtie pasta, and broccoli topped with a zesty cowboy butter lemon sauce.


Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tsp Cajun seasoning
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • Salt and black pepper, to taste
  • 2 tbsp olive oil
  • 6 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1/2 tsp crushed red pepper flakes (optional)
  • 1 tsp Dijon mustard
  • Juice and zest of 1 lemon
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh chives, chopped
  • Salt and black pepper, to taste
  • 12 oz bowtie (farfalle) pasta
  • 2 cups broccoli florets
  • 1/2 cup reserved pasta water
  • 1/2 cup grated Parmesan cheese (plus extra for topping)

Instructions

  1. Season chicken with Cajun seasoning, garlic powder, smoked paprika, salt, and pepper.
  2. Heat olive oil in a skillet over medium heat. Add chicken and cook until browned and cooked through.
  3. In a separate saucepan, melt butter over medium heat. Add minced garlic and red pepper flakes, cooking until fragrant.
  4. Stir in Dijon mustard, lemon juice, lemon zest, parsley, chives, salt, and pepper into the butter mixture.
  5. Cook bowtie pasta according to package instructions. Add broccoli during the last 2 minutes of cooking.
  6. Reserve 1/2 cup of pasta water, then drain pasta and broccoli.
  7. Combine pasta, broccoli, chicken, and cowboy butter lemon sauce in a large bowl. Adjust consistency with reserved pasta water as needed.
  8. Toss in grated Parmesan cheese and serve with extra cheese on top.
